Moritz Feichtinger, new chef at the Schwabenstube

  • The 26-year-old chef and restaurateur will give the gourmet restaurant new impetus and continue the Adler's traditional cuisine.
  • The Michelin Guide 2024 has confirmed the Schwabenstube's Michelin star for the 18th time in a row.

The Schwabenstube, the Michelin-starred restaurant at the Hotel Adler in Asperg, has recently appointed a new head chef: Moritz Feichtinger. The 26-year-old chef and restaurateur replaces Max Speyer, who worked at Adler Asperg for over nine years and has left the company at his own request.

Moritz Feichtinger completed his training as a chef at the Hotel Traube in Tonbach in 2018. He then worked as Chef de Partie at the Köhlerstube restaurant at the same hotel in the Black Forest until 2021. During this time, the restaurant was awarded one Michelin star, three Gault & Millau toques and eight Gusto pans. 

He then studied at the hotel management school in Heidelberg, graduating first as a certified chef and state-certified caterer, and later as a state-certified hotel manager. He worked as a sous chef at the Hotel Krone in Großsachsen until he moved to the Hotel Adler.

"The position as head chef at the Schwabenstube in Adler Asperg means a lot to me, as it is a great opportunity to realise my potential. I really like the demands placed on this type of cuisine and the creative freedom. As head chef, I would like to present my idea of classic but modern cuisine and consolidate my personal signature," says Moritz Feichtinger. The Adler Asperg is an international "4-star superior hotel". With 70 rooms, conference and banqueting facilities, the Adler is the only hotel in the Ludwigsburg area with a swimming pool. The hotel has four different restaurants: the Schwabenstube, the in-house gourmet restaurant with a Michelin star, the tapas bar "Aguila", the RichardZ and the Schubart Stube on the Hohenasperg.
