New vegan dishes at Adler Asperg

Due to the increasing demand for vegan dishes, we have recently introduced vegan dishes in the tapas bar "Aguila". In the Schwabenstube, our gourmet restaurant, we now offer a vegan menu with three or four courses. 

"The orientation of our vegan dishes is modern" - explains Max Speyer, head chef at Adler Asperg.- "But the dishes are prepared with the ingredients and techniques of a gourmet restaurant".  

Creative vegan gourmet dishes come with some challenges, such as cooking methods. "For "vegan cream ice cream" and binding possibilities for foams or mousses, some new expertise has to be learned" - Speyer explains. 

The current menus at the restaurants in Adler Asperg feature vegan dishes such as Tartar of Cauliflower, Roasted Red Cabbage, Fine Noodles with Pear, Coarse Mustard, Pointed Cabbage and Walnut or Cream of Potato Soup with Herb Cream & Krüstchen.  Our chef's favourite is the "cauliflower tartare": "It is reminiscent of Thai green papaya salad with strong flavours" - describes Speyer. 

The restaurant menus at the Adler Asperg change regularly, giving our guests the opportunity to discover new delicious vegan dishes in our restaurants.
