Asparagus season

Asparagus season at last!

From mid-April to the end of June is asparagus season in Germany. Whether green, white or purple: asparagus is extremely healthy.  Green asparagus contains more C and beta-carotene. Asparagus is also considered healthy because of its low calorie content but high mineral and vitamin content.

The botanical name of asparagus is "Asparagus Officinalis" and means "medicine" in Latin. Before the Romans introduced the vegetable asparagus into the diet as a delicacy, it was valued as a medicinal plant for coughs, bladder problems, stomach ulcers and nervous disorders in China, Greece, Egypt and India. It was not until the 19th century that white asparagus was discovered in Brunswick.

At Adler Asperg, we rejoice in the asparagus season. That's why we offer the "vegetable gold" in the following dishes as individual dishes or 3 or 4-course menus in the Schwabenstube:

  • Asparagus salad with tomato vinaigrette, scrambled egg spume and wild herbs
  • Asparagus cream soup with quail praline, asparagus tips, wild leek cream and croutons
  • Asparagus spears with hollandaise sauce, herb pancakes, new potatoes and boiled ham
  • Sorbet variation with fresh fruit
